Make sure to sample our local fare, some of the items that you might expect to see on many of the local menus.
American Bison (Buffalo)
Local restaurants serve this generally as a sirloin. Just like other game it is very lean, so do not have the meat over cooked. Try it rare or medium rare. You might also find buffalo burgers on certain lunch menus, just make sure you are in a quality establishment or it might taste like rawhide.
Elk
Although you want be eating elk from the local woods, many people enjoy the flavor or elk which is more rich then venison. Where you have it as steak, chop or medallions, give it a try and most likely you'll be fan.
Pronghorn (Antelope)
Generally a little harder to find on local menus, but well worth it. Pronghorn is the North American version of the Antelope, which is native to Africa. You'll find Antelope served as medallions and stew.
